An extended boil of 3 hours added some color and depth, before it was transferred into one of our oak foeders, where it was fermented with a special strain of yeast originating from a brewery on the border of France and Belgium. This beer is super drinkable, with familiar Saison esters and a hint of our house character from our oak tank. -Holy Mountain
