Holy Mountain Brewing Eternal Recurrence

This Blonde Bière de Garde showcases a refined balance between delicate malt and expressive yeast character. Aroma. Moderate to high intensity. Dominant grainy-sweet and lightly cracker-like aromas from the Pilsner malt. Strisselpalt hops contribute distinct herbal, floral, and spicy notes. The Brettanomyces influence is evident through notes of wet hay, earthy funk, and a touch of stone fruit esters. Clean fermentation profile otherwise, with no significant alcohol heat.
Taste. Initial impression of soft, bready malt richness followed quickly by a drying, rustic complexity. Eternal Recurrence was brewed with 100% Pilsner Malt and hopped with French Strisselspalt. An extended boil of 3 hours added some color and depth, before it was transferred into one of our oak foeders, where it was fermented with a special strain of yeast originating from a brewery on the border of France and Belgium.
