Holy Mountain Brewing Crucifixation

American IPA 6.3 º
Crucifixation is a vibrantly aromatic American IPA that bridges the gap between classic structure and modern juicy texture. A complex grain bill featuring Two Row, Pilsner, and Chit malt, supplemented by Raw Wheat, Flaked Barley, and Malted Oats, provides a soft, pillowy foundation without excessive weight. The sensory profile is dominated by a heavy dry-hop regimen of Mosaic and Cashmere, yielding intense notes of ripe mango, sweet melon, and candied lemon peel. A subtle kettle addition of Sabro adds a whisper of coconut creaminess to the tropical bouquet. It finishes remarkably quenching and dry, showcasing a modern hop expression while maintaining high drinkability and a crisp, clean resolve.
Appearance. Presents a pale gold to light amber hue (7 SRM) with a luminous, slight haze consistent with the high protein content of the wheat and oats. It is topped by a persistent, medium-sized white head with excellent lacing.
Aroma. High intensity hop aroma featuring prominent notes of blueberry, mango, and papaya from the Mosaic, layered with the herbal lime and melon characteristics of Cashmere. A faint, creamy coconut and stone fruit undertone from the Sabro emerges as the beer warms, supported by a low, clean, grainy-sweet malt presence.
Taste. Initial impression is a burst of juicy tropical fruit and bright citrus oils. Mosaic drives flavors of mixed berries and peach, while Cashmere adds layers of sweet lemon and ripe melon. The bitterness is medium-high and firm but remains smooth and integrated. A lean, grainy malt profile supports the hops before transitioning into a medium-dry, crisp finish with a lingering hop-resin and citrus peel aftertaste.
Mouthfeel. Medium body with a notably soft, smooth, and slightly creamy texture derived from the flaked barley and oats. Moderate-high carbonation provides a refreshing, prickly sensation. The 6.3% ABV offers a very light, well-integrated warmth without any harsh astringency.
