This rustic Saison showcases a sophisticated interplay of grain and fermentation. The inclusion of malted and flaked rye provides a peppery, bready depth that complements the floral and grapefruit characteristics of Ella hops. Following a primary fermentation in cognac foudres, extended aging with Brettanomyces in puncheons introduces a delicate layer of wild funk—reminiscent of dry hay and leather—alongside subtle oak tannins and a whisper of vinous spirit. The result is a complex, bone-dry ale where the spicy rye grain profile harmonizes with bright hop aromatics and a lingering, earthy finish.
Appearance. Deep gold with copper highlights; hazy to cloudy clarity due to the high rye content and dry hopping. Features a tall, dense, white head with excellent retention and significant lacing.
Aroma. High intensity aromatics featuring spicy and grainy rye notes, complemented by floral and anise-tinged Ella hops. Complex fermentation profile including lemon and pear esters, white pepper phenols, and an earthy, leathery Brettanomyces character. Sublte oak and faint spirit notes from cognac foudre aging are present.
Taste. Initial impression of peppery rye and bright citrus. The flavor is dominated by grainy malt and spicy, floral Ella hops with a touch of tropical fruit. Fermentation character is assertive, providing clove-like phenols and a rustic, barnyard funk. Bitterness is moderate but accentuated by a bone-dry finish. Lingering aftertaste of spicy grain and dry oak tannins.
Mouthfeel. Medium body with a slight silken viscosity from the flaked rye. High carbonation provides an effervescent, prickly sensation. Alcohol warmth is very low and well-integrated. No astringency, though oak tannins provide a structured dryness.
