This Wild Specialty Beer is a masterclass in fermentation-driven complexity, utilizing a high-temperature Brettanomyces ferment to unleash a deluge of tropical esters. The sensory experience is dominated by a pungent tsunami of fruit, weaving together the fuzzy sweetness of peaches with the sharp, electric tang of passionfruit and succulent mango. Despite the massive fruit load, the underlying golden sour base remains evident, offering a crisp acidity that cuts through the nectar-like intensity. Expect a vibrant interplay between the funky, leathery undertones of the Brettanomyces yeast and a sun-drenched orchard of stone and tropical fruits, finishing with a dry, refreshing snap.

Appearance. SRM 4-7. Deep golden to pale orange with a hazy opacity from heavy fruit saturation. The head is ivory-white, moderately bubbly with fair retention, leaving a slight lace as it recedes.

Aroma. High intensity aromatics of ripe mango, tart passionfruit, and sun-warmed peaches. Features complex fermentation notes including pineapple esters, light barnyard funk, and a clean lactic acidity. Malt presence is very low, yielding entirely to the pungent fruit profile.

Taste. Initial impression is a sharp, refreshing lactic sourness, followed immediately by a dense wave of peach and mango. Passionfruit provides a bright, citrusy zing that enhances the acidity. The Brettanomyces contributes subtle earthy and spicy complexity. Bitterness is negligible; the finish is bone-dry and crisp with a lingering tropical fruit skin aftertaste.

Mouthfeel. Medium-light body with a slightly plush texture from the fruit solids. Carbonation is moderate-high, providing a prickly, effervescent sensation. No notable alcohol warmth is present; a faint fruit-derived tannin adds structure.

The resultant beer represents our most heavily fruited offering to date, and provides a complex, pungent tsunami of tropical flavour.”
