This complex Wild Specialty Beer showcases the depth of raw golden ale brewing, displaying a rustic, unboiled malt character derived from local barley, wheat, and rye. Fermented with a Brettanomyces blend and a two-year-old golden sour ale aged in wine barrels, it bursts with a lush aroma of Spanish apricots and a delicate, evolving rustic funk. Subtle Tanzanian vanilla weaves through the background, softening the sharp, bright lactic acidity. It represents a masterful blend of vibrant stone fruit esters, nuanced oak tannins, and a dry, wild finish that balances juicy sweetness with complex fermentation-derived depth.
Appearance. Warm golden to deep apricot-orange in color (SRM 6-9). Displays a hazy, unfiltered appearance with a slight cloudiness due to the unboiled "raw" process utilizing wheat and rye. The pour generates a sparse, white head with poor-to-moderate retention and minimal lacing, typical of acidic wild fermentations.
Aroma. High intensity. Prominent, ripe, juicy Spanish apricot notes dominate the nose, seamlessly integrated with complex wild fermentation characteristics. Earthy, leathery, and rustic funk from the Brettanomyces and house culture blends with a subtle, creamy Tanzanian vanilla sweetness. Underlying notes of white wine wood tannins and a soft, bready raw-grain aroma support the fruity and acidic bouquet. Hop aroma is entirely absent.
Taste. Vibrant, tart, and intensely fruit-forward initial impression. Lush, fresh apricot flesh flavors meld with a delicate vanilla smoothness. No hop flavor or bitterness is present. The mid-palate features a clean, sharp lactic sourness from the house culture and the blended aged sour ale, accompanied by complex barnyard and musty Brettanomyces funk. Soft, rustic grain flavors from raw barley, wheat, and rye provide a gentle, bready backbone. The finish is highly attenuated, dry, and acidic, with lingering notes of stone fruit, oak tannins, and growing wild funk.
Mouthfeel. Medium-light body, though the raw wheat and rye provide a slightly silkier, fuller texture than standard highly-attenuated wild ales. Carbonation is moderate to high, creating a lively spritz. Low-to-moderate alcohol warmth is smoothly integrated. A mild, pleasant puckering astringency from the wine barrel tannins and apricot skins enhances the dry finish.

We fermented this raw ale with a blend of Brettanomyces strains, along with our house culture of yeast and bacteria for 3 months.

The beer was subsequently blended (80/20) with a 2-year-old golden sour ale, aged in wine barrels. this blend was then refermented with 200g/l of Spanish apricots and Tanzanian vanilla. the resultant beer has intense stone fruit, along with a delicate but growing funk.
