This beer combines a blend of two golden sour beers, brewed with local Scottish Barley, Wheat and Oats, and fermented with multiple Brettanomyces and Bacteria strains. Whilst a framboise style is traditionally brewed with raspberries, decided to use local Tayberries to showcase their intense raspberry character, vibrant pinkish red hue and huge aroma.

Inspired by the Belgian Framboise style, we re-fermented our base golden sour beer on 220g/l Scottish Tayberries harvested 12 from miles from the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred. Whilst a framboise style is traditionally brewed with raspberries, we decided to use our local tayberries to showcase their intense raspberry character, vibrant pinkish red hue and huge aroma.
