This Wild Specialty Beer is a saturated exploration of tropical decadence, driven by a staggering addition of Indian Alphonso mango. The sensory experience opens with an explosive, overripe fruit character reminiscent of juicy fruit gummies and mango nectar. Beneath the fruit intensity, a four-month primary fermentation using tropical-forward yeast strains provides layers of guava and pineapple, while a subtle Brettanomyces funk adds complex earthy and leathery depths. Despite its strength, the beer remains vibrant, with the lush sweetness of the fruit countered by a bright, wild acidity and a dry, funk-kissed finish that perfectly balances the substantial gravity of this fruit-heavy composition.

Appearance. Saturated deep orange to golden-amber with significant haze from fruit solids. Low, off-white head with poor retention and minimal lacing, typical of acidic wild fermentations.

Aroma. High intensity; dominant and fresh Alphonso mango and tropical fruit nectar. Complementary notes of overripe pineapple and passion fruit esters from the yeast. A subtle but distinct Brettanomyces presence offers hints of hay, damp earth, and light barnyard funk.

Taste. Bold, fruit-saturated entry featuring lush mango and tropical gummy candies. The initial fruit sweetness is balanced by a sharp, clean acidity and the complex, dry character of a long wild fermentation. Hop bitterness is negligible. The finish is lingering and fruity, with a subtle leathery funk and a clean, dry aftertaste.

HOLY GOAT -Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.
We have taken an unconventional approach to yeast and fermentation, opting for a proprietary method that utilises Brettanomyces yeast for long maturation times (typically 3-4 months) to produce unique, complex, full-flavoured sour beer.
Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.
Inspired by tradition, we also seek to pay homage to our brewing forbears, mixing old and new techniques with the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!
The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.
