Geïnspireerd door de oude Flanders Reds, is Doom Witch een blended sour red ale, een combinatie van 80% 'jong' voorraadbier op staal en ongeveer 20% 'gerijpt' voorraadbier, dat meer dan een jaar in rode wijnvaten heeft gerijpt. De combinatie van oude en jonge bieren heeft geresulteerd in een complex zoetzuur smaakprofiel met een subtiel eikenkarakter.
Deze blend is hergist op 200 g/l lokaal geteelde Schotse aardbeien van de oogst van 2025. Ons doel voor deze jaargang was om het fruit zo snel mogelijk na de oogst te gebruiken, zodat de smaken en aroma's optimaal tot hun recht komen. Het resultaat is een complexe balsamico-aardbeienblend met een zich ontwikkelende houtachtige funk.

Inspired by Flanders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in red wine barrels for upwards of one year.
The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blended base was refermented on 200g/L of locally grown Scottish strawberries from the 2025 harvest. Holy Goat's goal with this vintage was to use fruit as soon as possible after harvest, to best showcase its flavours and aromas.
The result is a complex balsamic strawberry blend with a developing woody funk.
