This evocative American Stout presents a deep, sensory-rich profile rooted in historical recreation. Heritage Chevallier malt provides a sturdy, biscuit-like backbone for intense layers of roasted coffee and bittersweet chocolate derived from amber, brown, and black malts. The year-long maturation in North British whisky casks imparts sophisticated notes of charred oak and vanilla, while a unique mixed culture of Brettanomyces and Debaromyces—sourced from 1895 shipwrecked bottles—introduces a complex, rustic funk and leathery phenols. High bitterness from assertive hopping cuts through the dense, dark malt character, leading to a lingering, bone-dry finish characterized by spirituous warmth and earthy fermentation complexity.
Appearance. Opaque jet black (40+ SRM) with a large, persistent, light-tan head that exhibits excellent lacing.
Aroma. High intensity; dominant aromas of roasted coffee beans and dark chocolate are layered with vanilla and toasted oak from whisky barrel aging. A distinctive wild character provides earthy, leathery Brettanomyces notes alongside a faint citrusy hop presence.
Taste. Initial flavors of bittersweet chocolate and heavily charred grain are supported by a rich, bready malt depth from Chevallier base malt. Medium-high bitterness and resinous hop notes balance the No.2 Invert sugar and malt sweetness. The finish is very dry and lingering, showing complex wood-derived tannins and a mild, clean acidity from the mixed culture.
Mouthfeel. Full-bodied and creamy with a smooth, moderately strong alcohol warmth. Carbonation is moderate to high, with a light roast-derived astringency that remains well-integrated.

Barrel Aged Stout

Brewed in collaboration with Epochal Barrel Fermented Ales. This is a recreation of a beer found in bottles retrieved from a shipwrecked vessel Wallachia, which sank after a collision in the Clyde Estuary in 1895. The beer itself was a strong export stout from the McEwan’s brewery in Glasgow, destined for the West Indies.

Our version utilises ingredients typical for the period, including heritage Chevallier base malt, amber, brown and black roasted malts and No.2 Invert sugar. This version has been barrel aged for one year in North British whisky casks, along with a mixed culture (Brettanomyces and Debaromyces) harvested from the original bottles salvaged from the shipwreck.

Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers. Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.

Inspired by tradition mixed fermentation beer styles we seek to pay hommage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer! The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.
