Antes de que la cerveza blanca y rubia tocara las papilas gustativas de los alemanes, la cerveza negra y de baja fermentación era la que calmaba la sed de los muniqueses. La primera variedad de cerveza que se despachó en “la fábrica de cerveza oscura” sigue convenciendo a los que la prueban gracias a su sabor a malta tostada y a lúpulo, así como a una decente nota malteada al final. Conocida en un principio como la Braun Bier Hofbräuhaus, sus comienzos fueron de forma exclusiva para el Duque y familias de la élite muniquesa, y solo hombres. Dejó esta exclusividad en 1829 por orden de Ludwig I, abriendo sus puertas al público y bajando los precios para que todos pudierann beber sus cervezas, así se convirtió en el centro de la vida pública y política de Munich y de toda Alemania. Parece ser que al rey Ludwig I le gustaban los festejos populares y, fue con los de su propia boda el origen lo que ahora conocemos como Oktoberfest. Una buena combinación de matices
Vista: color castaño oscuro con una espuma cremosa, consistente y fina Olfato: notas de caramelo y chocolate con presencia de malta tostada y pan, acompañadas de ligeras notas afrutadas. Gusto: presencia predominante de la malta tostada, el caramelo y sutil presencia de chocolate con un amargor moderado con final dulce.
Sensación: cerveza de cuerpo y carbonatación media, textura ligeramnte cremosa. Perfecta para acompañar asados, carne ahumada y embutidos.

HOFBRAUHAUS Einsiedler Brauhaus GmbH is a midsize brewery located in Chemnitz, near the Czech border. It all started in 1885 when machinery industrial, Mr Emil Schwalbe, established the brewery in Einsiedel, near Chemnitz. During the 20th Century the brewery went through an eventful history. Einsiedel is a tiny place situated at the foot of the Ore mountains, part of the Bohemian massif, in the Free State of Saxony. The place Einsiedel was incorporated by Chemnitz in 1996.

Oggi invece le tecnologie di trattamento dell’acqua consentono di ottenere, da qualsiasi acqua, un’acqua con la composizione ideale. Hofbräu Dunkel ha un grado saccarometrico superiore alla media in quanto appartiene alla categorie delle birre speciali (13 gradi Plato) e una titolazione alcolica di 5,5 gradi in volume. La schiuma presenta caratteristiche di base veramente notevoli sia per quanto riguarda la finezza, sia per la densità, nonché per l’aderenza e la persistenza. L’aspetto evidenzia una birra assolutamente limpida, anche se ovviamente scura. In effetti Hofbräu Dunkel evidenzia un piacevole colore tonaca di frate tipico delle Münchner. Abbastanza decisa l’intensità olfattiva e gradevole la sua finezza olfattiva, che palesa da una parte decisi e prevedibili sentori di malto tostato ma dall’altra altrettanto insoliti sentori di sciroppo d’acero. A mano a mano che aumenta la temperatura della birra avvengono numerose virate a livello olfattivo. Emerge la frutta secca, soprattutto il sentore di nocciola, seguito da note di caffè e da un elegante fruttato d’albicocca secca.
A livello di palato s’impone il malto dolce, la noce e si evidenziano note speziate di luppolo. Il finale è preda di ricchi toni caldi maltati. Una frizzantezza moderata è dovuta anche a una gradazione alcolica leggermente più sostenuta. Il corpo è rotondo e lascia una bocca piena a ricca di sensazioni. L’amaro è percettibile quasi esclusivamente in virtù dei malti tostati che però rilasciano un amaro ben diverso dalle sensazioni dispensate dagli acidi alfa contenuti nella luppolina. L’equilibrio gustativo è decisamente orientato al dolce. Non molto ricca di retrolfatto come del resto ci si aspetta per gran parte delle birre a bassa fermentazione. La persistenza retrolfattiva è discreta.
ABBINAMENTI GASTRONOMICI:
Di corpo medio, la Hofbräu Dunkel è stata definita in Baviera ‘la migliore birra per sapide merende’. Ci è in parte ignoto che cosa intendano i Bavaresi per sapide merende ma possiamo tentare di interpretarlo con ‘sapidi ragionamenti’. Innanzitutto un alimento è sapido quando contiene una certa quantità di sali minerali, siano essi di sodio, potassio o quant’altro. Non dovremmo essere lontani dalla verità se incentriamo la nostra attenzione sui salumi, che i sali ce li hanno nella radice stessa della parola.
Ebbene, salumi crudi o cotti? I toni caldi che caratterizzano la Hofbräu Dunkel e che spaziano anche nell’area dell’affumicato e dello speziato ci fanno pensare a salumi cotti, tipo i würstel, la mortadella, il salame rosa o lo zampone. Non possiamo però dimenticare salumi crudi che comunque palesano toni caldi come ad esempio lo speck o il prosciutto di Sauris, specialmente se sono tendenzialmente magri o al massimo semigrassi. Buona sapidità e toni caldi li si ravvisano anche in certi formaggi a pasta filata, tipo provola o scamorza il cui abbinamento con la Hofbräu Dunkel è assolutamente da consigliare.
