This legendary Irish Red Ale presents a striking ruby hue and a sensory profile defined by its traditional English ingredients. The grist, featuring Chocolate and Crystal malts, creates a rich foundation of toffee and subtle cocoa. A classic hop blend of Styrian, Goldings, and Fuggles introduces a refined earthy and floral counterpoint, balancing the initial sweetness with a rounded, moderate bitterness. Fermentation yields a mischievous fruity character that complements the deep malt complexity. It finishes with a satisfying, lightly roasted dryness, making it a versatile companion for hearty roasts and savory stews.
Appearance. Deep reddish-copper to ruby color (SRM 12-16) with excellent clarity. It pours with a moderate, tan-colored head that shows average persistence and light lacing.
Aroma. Moderate malt intensity featuring distinct notes of toffee, caramel, and a hint of toasted bread. The Chocolate malt adds a subtle, dark cocoa layer. Hop aroma is low but perceptible, offering earthy and floral scents from the Goldings and Fuggles. Low fruity esters are present.
Taste. Initial soft toffee and caramel sweetness from the Crystal malt transitions into a grainy-biscuity mid-palate. Light chocolate notes emerge before being balanced by a moderate earthy hop bitterness. The finish is medium-dry with a touch of roasted grain dryness. Clean fermentation character with subtle dark fruit esters.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Moderate carbonation provides a gentle prickle on the tongue. Very light alcohol warmth is well-integrated and smooth.
