Hilltop Brewery Hopset
This West Coast IPA captures the essence of a California sunset with its bright, resinous clarity and vibrant hop profile. Intense aromatic layers of Mosaic and Ekuanot deliver a complex interplay of tropical fruit and deep, dank herbal notes. The Ekuanot contributes distinctive hints of lime and melon, while Mosaic provides its signature berry and pine-like complexity. A clean, supporting malt backbone allows the aggressive bitterness to shine, leading to a crisp, bone-dry finish. It is a masterful display of New World hop intensity, offering a sensory journey through citrus groves and resinous forests while maintaining sharp focus and high drinkability.
Appearance. Color is a deep gold to light amber (7-9 SRM). Brilliant clarity with a medium-sized, white, persistent head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma featuring prominent notes of tropical fruit, berry, and citrus, balanced by a distinctively dank and resinous quality. Very low, clean, grainy-sweet malt character supports the hops with a neutral fermentation profile.
Taste. Initial impression is a burst of citrus and tropical fruit flavor followed by a firm, clean bitterness. Hop flavors of blueberry, papaya, and pine predominate. Malt is low and neutral, providing just enough structure to support the high bitterness. Finish is dry and crisp with a long, lingering hoppy aftertaste.
Mouthfeel. Medium-light body with a smooth, non-astringent texture. Carbonation is medium-high, providing a lively mouthfeel. Very light, well-integrated alcohol warmth is present.
