This 2023 edition of HillDevils Basement Barrel Aged Double IPA offers a bold sensory collision between high-octane American hops and the refined character of Maker's Mark barrels. Pouring a deep gold with copper highlights, it radiates an intense bouquet of resinous pine and tropical fruit, quickly followed by the rich, toasted oak and vanilla aromatics of the bourbon. On the palate, aggressive hop bitterness is tempered by the whiskey’s caramel and spice notes, creating a complex, warming experience. The finish is surprisingly clean for its strength, lingering with a persistent hop punch and smooth, spirit-forward elegance.
Appearance. Deep gold to light copper (10–14 SRM) with a moderate, persistent off-white head leaving significant lacing. Generally clear, though a light chill haze may be present from heavy dry-hopping.
Aroma. High intensity; dominant citrus and resinous hop character blended with distinct bourbon-derived notes of vanilla, caramel, and charred oak. A light, clean malt background supports noticeable but well-integrated alcohol.
Taste. Immediate impact of grapefruit and piney hops, transitioning into the smooth, sweet-oak influence of Maker's Mark barrels. High bitterness provides a firm backbone. Flavors of toasted wood and whiskey-soaked fruit persist into a medium-dry, warming finish.
