This traditional Gueuze offers a masterful display of complexity, blending one, two, and three-year-old lambics to create a vibrant sensory profile. It opens with a sophisticated bouquet of barnyard funk, aged leather, and damp hay, balanced by sharp citrus rind and green apple notes. The palate is dry and effervescent, showcasing a refined tartness that complements subtle bready wheat and honeyed malt undertones. Notes of light oak and earthy minerals lead into a crisp, puckering finish. This blend captures the rustic elegance of spontaneous fermentation, delivering a multi-layered experience that remains balanced despite its assertive and wild character.
Appearance. Deep golden (5-6 SRM) with brilliant clarity and a thick, rocky, mousse-like white head with exceptional persistence. Highly effervescent with constant carbonation trails.
Aroma. High intensity with complex funkiness: barnyard, horse blanket, and aged leather. Moderate fruitiness of lemon zest and rhubarb. Low supportive malt character of honey and raw wheat. Very light oak presence with no hop aroma.
Taste. Sharply sour and funky with layers of hay, earthy minerals, and citrus rind. Low grainy malt flavor. Bitterness is negligible; balance is achieved through lactic acidity. The finish is bone-dry and crisp with a lingering, complex tart aftertaste and faint vanilla from barrel aging.
Mouthfeel. Medium-light body with a soft, velvety texture. High carbonation provides a prickly sensation on the tongue. Moderate puckering tartness is present without harsh astringency. Subtle alcohol warmth.
