This Saison presents a sophisticated rustic profile, defined by its maturation in Pineau des Charentes foudres. The sensory experience is lead by a vibrant interplay of stone fruits—specifically apricot and white peach—and a subtle, wild 'sauvage' funk that adds earthy complexity. The yeast provides a signature black pepper spiciness that complements the vinous, fortified wine notes and faint oaky vanilla derived from the barrel. A soft, grainy malt backbone supports the high attenuation, while an effervescent carbonation carries floral hop notes through to a bone-dry, refreshing finish. It is a masterful balance of farmhouse tradition and French viticulture influence.

Appearance. Deep gold with light orange hues (SRM 6-8); features a dense, rocky, long-lasting white head with exceptional Belgian lace. The beer is unfiltered and hazy.

Aroma. High aromatic intensity featuring pome fruit and citrus esters alongside prominent apricot and grape notes from the foudre. A distinct black pepper phenolics presence mingles with subtle earthy, leathery 'sauvage' funk. Malt is low and lightly grainy, while hops offer a faint floral and spicy character.
