This Vermont sour saison presents a complex marriage of rustic farmhouse tradition and botanical elegance. Aged in local Vermont gin barrels, the beer radiates a bright, tart acidity that highlights the expressive fruity-spicy yeast profile. Zesty notes of lemon peel and white pepper from the Saison fermentation intertwine with the barrel’s influence, offering whispers of juniper, coriander, and dried herbs. A base of pale malt provides a soft, grainy foundation that remains lean and highly attenuated. The result is a vibrant, herbal, and exceptionally balanced brew with a crisp, dry finish that captures the essence of both wood and wild fermentation.
Appearance. Pale gold with a slight orange hue; hazy and unfiltered appearance with a dense, rocky white head that exhibits excellent retention and thick Belgian lacing.
Aroma. High intensity with a complex blend of lactic tartness, lemon zest, and white pepper. The gin barrel adds distinct herbal notes of juniper and botanical spice. Low grainy malt and a faint floral hop character reside in the background.
Taste. Initial impression is bright and tart with a lemony acidity. A soft, grainy malt flavor supports a complex middle of black pepper, juniper, and mixed herbs. Bitterness is low, as the acidity provides the primary balance. It finishes exceptionally dry with a lingering, crisp, and herbal aftertaste.
