Pilsner 6 º
This New Zealand Pilsner showcases a vibrant marriage of traditional lager technique and modern Southern Hemisphere hops. The delicate Pilsner malt base provides a bready, crackery foundation for an assertive dry-hop profile. Nelson Sauvin contributes unmistakable notes of crushed gooseberry and white wine grapes, while Motueka adds a bright splash of lime and citrus zest. Southern Cross rounds out the experience with bold floral aromatics and a touch of lemon peel. Five weeks of lagering ensures a smooth, clean palate, though its unfiltered nature adds a soft visual depth. Expect a refreshing, hop-forward character with a clean, lingering bitterness and a crisp, dry finish.
Appearance. Yellow-gold in color (approx. 4 SRM). While the style often leans toward brilliance, this unfiltered version presents a slight, attractive haze. It is topped by a creamy, long-lasting white head with excellent lacing.
Aroma. High hop aroma intensity featuring distinct white wine, gooseberry, and tropical fruit notes. Bright lime and lemon citrus are present alongside a significant floral perfume. The malt support is medium-low, offering a neutral, crackery, and bready quality. Fermentation is very clean with no esters.
Taste. The palate leads with a clean, medium hop bitterness that is prominent but not harsh. High hop flavors of tropical melon, lime zest, and spicy florals dominate. A medium-low bready and grainy-sweet malt flavor provides a necessary backbone. The finish is dry and smooth, with a lingering, pleasant bitterness and a clean aftertaste devoid of fermentation byproducts.
Mouthfeel. Medium body with a notable smoothness from the extended lagering. Carbonation is medium-high, providing a refreshing prickle on the tongue. Despite the 6% ABV, the alcohol warmth is very well-integrated and subtle, with no astringency.

Ingredients: Pilsner Malt. Hops: Pacific Jade, Kohatu, Rakau

Sensory Notes: Subtle tropical hop notes flow throughout against a slightly cracker-y malt back drop. Naturally carbonated for delicate bubbs.

Back Story: Brewed at the halfway point of the rainy season here  in Seattle, this beer is the promise of summer to come. And, in all honesty, because of FOMO about the summer going on in the southern hemisphere right now.
