Everglow Winter IPA is a festive American IPA that artfully blends forest resin with tropical brightness. A base of pale malt and wheat creates a smooth, grainy canvas, while a touch of caramel malt lends a light copper hue and subtle toffee depth. The hop profile is led by Simcoe, Azacca, and Chinook, delivering a complex interplay of pineapple, citrus, and dark berry flavors. Fresh spruce tips amplify the resinous pine notes, resulting in a crisp, wintery character. It balances a firm bitterness with enough malt backbone to support its strength, finishing clean with a lingering evergreen snap.
Appearance. Light copper to reddish-amber color (approx. 10–12 SRM). Clear with a medium-sized, persistent off-white head and good lacing.
Aroma. High intensity. Prominent pine and resinous spruce character from the Chinook hops and spruce tips, supported by tropical mango and mixed berry notes from Azacca and Simcoe. Low, clean, toasted malt and light caramel sweetness in the background.
Taste. Immediate punch of resinous pine and citrus. High hop bitterness is balanced by tropical fruit and berry flavors. The spruce tips add a cooling, forest-like complexity. Low to medium-low malt flavors of toasted bread and light caramel. Finishes medium-dry and hoppy with a lingering bitterness.
Mouthfeel. Medium body with a smooth, slightly creamy texture from the wheat. Moderate-high carbonation. A well-integrated, gentle alcohol warmth is present.
