Mead 8 º
This traditional Asturian mead draws from Nordic heritage to deliver a robust sensory experience. The double fermentation process yields a distinctive, powerful honey character that dominates the profile. Aromas are defined by rich, floral wildflower honey and delicate pome fruit esters. On the palate, it strikes a balance between natural honey sweetness and a clean, slightly acidic finish, showcasing a medium body that feels substantial despite its approachable strength. The artisanal craftsmanship is evident in its clarity and integrated alcohol, making this Semi-Sweet Mead a versatile choice for traditional cup service or as a concentrated digestif.
Appearance. Brilliant clarity with a pale gold to light amber hue (SRM 4-6). It displays a still to petillant character with no head formation and minimal legs upon swirling.
Aroma. Moderate to high intensity of pure wildflower honey, presenting floral and slightly earthy notes. Low yeast-derived esters suggestive of fresh red apple or pear. No hop aroma or harsh fusel alcohols are present.
Taste. The initial impression is of rich, floral honey sweetness. It transitions into a well-balanced mid-palate where natural acidity provides structure. No hop bitterness or flavor. The fermentation is clean, leading to a lingering, semi-sweet finish that highlights the honey botanical origin.
Mouthfeel. Medium body with a smooth, slightly syrupy texture. Carbonation is low to still. Despite the 8% ABV, alcohol warmth is very subtle and well-integrated. No astringency or harshness.
