This Experimental Mead presents a sophisticated sensory balance where the traditional honey base takes a secondary role to a complex array of botanical additions. Despite its potent 10.5% ABV, the experience is remarkably refreshing and crisp. The profile is defined by a vibrant aromatic bouquet of spices and undisclosed fruits, which seamlessly integrate with a distinct herbaceous hop character. The appearance is a hazy, pale yellowish-amber, leading into a palate that favors a firm, bitter structure over syrupy sweetness. It concludes with an exceptionally dry finish, leaving behind faint honeyed echoes and clean, lupulin-driven resins.
Appearance. Pale yellowish-amber color (7-9 SRM). Distinctly hazy/veiled clarity. Very low head retention with a thin white rim and minimal lacing, typical of high-gravity meads.
Aroma. High aromatic intensity. Dominant spicy and fruity esters provide the primary character, masking the floral honey base. Moderate herbaceous hop notes are present, with very low perceived alcohol despite the high gravity.
Taste. Initial fresh fruit and spice impressions lead into a surprisingly bitter mid-palate. Flavor of honey is present but subdued, giving way to light herbaceous hop flavors and botanical complexity. Finishes very dry and clean with a lingering honey aftertaste that is not cloying.
Mouthfeel. Medium body with a crisp, refreshing texture. Moderate carbonation levels. Alcohol warmth is exceptionally well-integrated and barely noticeable. Smooth, with no significant astringency from the hops or spices.
