Hecatombe Noctua Irae
This Altbier presents a sophisticated sensory profile elevated by maturation with oak wood. It displays a deep toasted character where rich layers of caramel and toffee intertwine with toasted cereal notes. The wood aging introduces a subtle smoky complexity and enhances the presence of very ripe red fruit esters. While staying true to its heritage as a bitter amber ale, the malt richness is balanced by a firm hop presence. The result is a smooth, well-attenuated beer that marries the clean, crisp traditions of Düsseldorf with the nuanced, earthy depth of toasted oak for a lingering, dry finish.
Appearance. Deep copper to bronze-orange with brilliant clarity. Features a thick, creamy, long-lasting off-white head with excellent lacing.
Aroma. Moderate to moderately-high malt intensity defined by caramel, toffee, and toasted bread crusts. A light, refined smoky note and woody oak presence are evident, complemented by moderate esters of very ripe red fruits and a low spicy hop character.
Taste. Initial impression of rich, toasted malt with flavors of toffee and bread crust. Balanced by a firm hop bitterness (approx. 40 IBU) that leads to a clean, dry finish. Fermentation is clean with light red fruit notes and a subtle, lingering oaky tannin in the aftertaste.
Mouthfeel. Medium body with a smooth, firm texture. Moderate to high carbonation provides a crisp palate. Low astringency from the wood maturation with a very light alcohol warmth.
