Sandy Paws is a sophisticated Baltic Porter that showcases a refined complexity through its unique fermentation with German Ale yeast, typically reserved for Kolsch or Sticke Alt. This "Dark Lagered Ale" delivers a rich, multi-layered malt profile defined by notes of dark chocolate, licorice, and toasted bread crusts. The sensory experience is elevated by a complex ester profile of dried plums and black currants, balanced by a clean, lager-like finish. Despite its strength, the beer remains smooth and deceptive, offering a well-integrated alcohol warmth and a subtle, spicy hop character that lingers gently against a backdrop of dark, roasted malt sweetness.
Appearance. Deep, opaque dark brown with dark reddish-copper highlights (28.6 SRM). Crowned by a thick, persistent tan head with excellent lacing; clarity is brilliant despite its depth of color.
Aroma. High intensity of rich malt, featuring deep toffee, molasses, and toasted nuts. Subtle dark chocolate and coffee notes emerge without any burnt character. Complex fermentation esters suggest dried fruits like prunes and raisins, accompanied by a faint spicy note and a smooth, vinous alcohol presence.
Taste. Initial impression is malty-sweet, quickly evolving into a complex blend of nutty toffee, licorice, and dark chocolate.
