Imperial Stout 12 º
This decadent Imperial Stout presents a masterful layering of dessert-like complexity and barrel character. Aromas of toasted coconut and floral vanilla from Borneo and Madagascar beans intertwine with deep roasted cacao and espresso-like coffee. The extended 20-month maturation in Rye Whisky barrels introduces a sophisticated spicy oak and spirit warmth that cuts through the dense, molasses-heavy body. On the palate, the 6-hour boil reveals a viscous texture dripping with dark chocolate and caramel, while the rye spice provides a necessary counterpoint to the rich, lingering sweetness of the coconut and vanilla finish. It is a harmonious, high-gravity experience focused on depth and balance.
Appearance. Jet black and completely opaque (SRM 40+). Pours with a thick, deep tan head that settles into a persistent rim. Viscous legs are prominent on the glass, reflecting the 12% alcohol and high sugar density.
Aroma. Intense and multifaceted. Dominant notes of toasted coconut and sweet cream from the Madagascar vanilla are supported by a high-intensity roast profile of dark chocolate and fresh-ground coffee. Substantial spicy rye whiskey and charred oak notes provide barrel-aged depth, alongside background hints of black currants and dark molasses.
Taste. An initial wave of bittersweet cacao and dark-roasted coffee gives way to a lush, pastry-like mid-palate of coconut and floral Borneo vanilla. The 6-hour boil contributes a heavy molasses and treacle sweetness. A firm but smooth bitterness from roasted grains balances the rich profile, while the finish is long, warming, and resonant with rye whisky spice and toasted oak.
Mouthfeel. Intensely full-bodied and chewy with a thick, velvety, and almost syrupy viscosity. Carbonation is low to moderate, enhancing the luscious texture. A clear, smooth alcohol warmth is present and well-integrated, lacking any harshness.
