This sessionable American Pale Ale is designed to showcase the vibrant sensory profile of the Mosaic hop, offering a complex bouquet of blueberry, tangerine, and tropical papaya. The addition of Hallertau Blanc provides a sophisticated counterpoint of lemongrass and passionfruit. Built upon a foundation of low colour Maris Otter, the beer exhibits a subtle biscuity depth, while the inclusion of Carapils and Malted Oats creates a lightly toasted complexity and an enhanced, silky mouthfeel that defies its modest 4% ABV. Appearance. Pale straw to light gold (4-6 SRM). Topped with a moderate, bright white head featuring good retention and fine lacing. Generally clear, though the use of oats may lend a very slight, healthy brilliance.
Aroma. Moderately high hop intensity featuring a complex blend of tropical fruit (papaya, passionfruit), citrus (tangerine), and distinct berry notes (blueberry), accented by a herbal lemongrass edge. Low grainy-bready malt sweetness from the Maris Otter supports the hops without competing. Clean fermentation profile.
Taste. The initial impression is hop-dominant, bursting with tangerine, passionfruit, and blueberry. A light, toasted malt character from the oats and Maris Otter provides a brief bready middle before a moderate bitterness takes hold. The balance is firmly tilted toward the hops, finishing dry and clean with a lingering tropical and citrus aftertaste. No harshness or astringency.
Mouthfeel. Medium-light body with a surprisingly smooth, slightly creamy texture derived from the malted oats. Moderate to high carbonation provides a refreshing prickle on the tongue. No alcohol warmth is present.

Hallertau Blanc hops are used for the bittering addition. Hallertau blanc is a relatively new hop (2012) to come out of the German hop breeding programme it lends flavours and aromas of lemongrass and passionfruit. The aroma/dryhop additions will all be Mosaic with aromas/flavours off Blueberry, tangerine and papaya.
