This fresh-hop Double IPA presents a vibrant tapestry of resins and stone fruit. Fresh Chinook and Centennial hops from Yellingbo Hop Farm lead the charge with punchy citrus and classic pine needles, while additions of Azacca and Simcoe provide a sophisticated dimension of peach and nectarine. The sensory profile is built on a substantial grist of ale, wheat, and crystal malts, offering a supportive, slightly toasty grain backbeat that enhances the deep gold hue. The palate is defined by a weighty, persistent bitterness and a clean, warming alcohol presence, ensuring the intense hop character remains the centerpiece without being overshadowed by the malt foundation.
Appearance. Deep gold to light orange-copper (10-12 SRM). Brilliant clarity with a moderate-sized, persistent off-white head that leaves thick lacing on the glass.
Aroma. Intense hop aroma featuring fresh-cut grass, resinous pine, and grapefruit zest. Secondary layers of ripe peach and apricot emerge, supported by a low, clean, slightly bready and light caramel-tinged malt sweetness in the background.
Taste. Initial punch of resinous pine and citrus oil followed by juicy nectarine flavors. The bitterness is high and firm but remains clean, counterbalancing a subtle toasty malt richness. It finishes medium-dry with a long, resinous aftertaste and a touch of smooth alcohol warmth.
Mouthfeel. Medium-full body with a smooth, slightly creamy texture. Moderate carbonation. A noticeable but well-integrated alcohol warmth provides a satisfying glow without being solventy.
