Appearance. Deep golden color (5-6 SRM). Brilliant clarity with an effervescent body. Topped by a thick, rocky, mousse-like white head with exceptional retention and delicate lacing.
Aroma. High intensity and deeply complex. Dominant wild funkiness showcasing notes of wet hay, leather, and barnyard. This is balanced by moderate fruity esters of lemon zest, tart rhubarb, and aged pome fruit. Low bready and grainy wheat malt support; no hop aroma. Subtle hints of neutral oak and a clean, sharp lactic tartness.
Taste. Intensely sour and funky arrival. Flavors of citrus rind, green apple, and earthy funk mirror the aroma. Very low grainy malt sweetness is quickly overtaken by a firm lactic acidity. Zero hop flavor and negligible bitterness. The finish is remarkably crisp, bone-dry, and clean, leaving a lingering aftertaste of tart fruit and rustic wild character.
Mouthfeel. Medium-light body with a soft, velvety texture despite the acidity. High carbonation provides a prickly, champagne-like effervescence. Noticeable puckering tartness without harsh astringency. A very faint, well-integrated alcohol warmth is present at 6% ABV.
