Walden is a bright, effervescent Straight Sour Beer that captures the essence of a Scottish summer. An inviting aroma of cooling cucumber and aromatic water mint leads into a crisp, tart profile. The use of Scottish pale malt and fluffy wheat provides a delicate, crackery foundation for the sharp, lemony brightness of Lemondrop hops. Fresh Scottish gooseberries amplify the clean lactic acidity, adding layers of green, tangy fruit. The finish is remarkably dry and refreshing, balancing the herbal mint notes with a zesty citrus snap, making it an exceptionally lean and vibrant sessionable ale.

Appearance. Very pale straw (2-3 SRM). Hazy appearance with a dense, white head that exhibits poor retention. Highly effervescent with visible carbonation.

Aroma. Moderate to high intensity. Clean lactic sourness dominates, complemented by cooling cucumber and a distinct herbal lift from water mint. Citrus-forward Lemondrop hops provide a lemony zest, supported by a faint, bready malt character from the Scottish pale malt and wheat. No hop bitterness or fermentation byproducts like Brettanomyces are present.

Taste. Initial impression is a sharp, clean lactic tartness. The flavor of tart, green Scottish gooseberries is prominent, following through with cooling cucumber and botanical water mint. A light, crackery malt backbone from the Scottish pale malt provides structure without sweetness. Lemondrop hops contribute a lemon-peel citrus flavor rather than bitterness. Finishes very dry and crisp with a lingering, refreshing acidity.

Mouthfeel. Light body with a slight fluffiness from the wheat. High carbonation produces a prickly, effervescent sensation. Crisp acidity with no astringency or alcohol warmth.
