On the palate, the fruit's richness is deftly countered by the bright, zesty sharpness of fresh lime, providing the refreshing lactic tartness expected of the style. The finish is defined by a subtle, savory mineral edge derived from Maldon sea salt, which provides a mouthwatering quality and rounds out the fruit. It is a harmonious, fruit-forward, and refreshing interpretation of a classic historical wheat ale.
Appearance. 3–6 SRM; deep yellow to light orange with a moderate to full haze. Features a moderate white head with tight bubbles and fair retention; effervescent.
Aroma. High intensity with dominant notes of ripe mango and sweet vanilla. A light, doughy wheat malt character supports the fruit, accompanied by a clean lactic tartness and a hint of zesty lime. No hop aroma.
Taste. Initial impression is of succulent mango sweetness and creamy vanilla. This is quickly balanced by a medium-high lactic sourness and the citric sharpness of fresh lime. Malt flavor is low, presenting as soft bread. Bitterness is very low. The finish is dry and crisp, punctuated by a noticeable but restrained mineral saltiness from the Maldon sea salt that lingers on the tongue.
