The nose is a complex tapestry of wild, funky esters—think leather and barnyard—intertwined with deep, concentrated apple and autumnal fruit notes. On the palate, it delivers an intense, multi-layered fruit character with a sharp, naturally occurring acidity and a firm tannic structure that provides remarkable grip. The finish is bone-dry and lingering, showcasing the terroir of the food forest through earthy undertones and a sophisticated, vinous complexity that elevates the drinking experience.

Appearance. Deep copper to burnished amber in color. Generally clear to brilliant, though a faint natural haze may be present. Carbonation is moderate, forming a brief, thin white ring that dissipates quickly without significant lacing.

Aroma. High intensity with a prominent wild fermentation character; notes of damp earth, leather, and mild horse blanket. Rich, cooked apple aromatics are joined by secondary hints of dark berries and stone fruit. No hop aroma or malt character present.

Taste. Initial impression is tart and sharp, transitioning into a dense, concentrated apple flavor. The wild fermentation lends a spicy, phenolic depth and a rustic, woody complexity.
