This English IPA bridges tradition and modern hop profiles, featuring a robust malt backbone that supports a vibrant hop character. Dry hopping with Cascade and Nelson Sauvin enhances the aromatic profile, introducing distinct citrus and tropical fruit notes. The result is a balanced, well-attenuated ale where the biscuity malt profile harmonizes with a firm bitterness, leading to a crisp, dry finish that emphasizes the unique qualities of these contemporary hop varieties.
Appearance. Deep golden to light amber (8-12 SRM). Generally clear, though dry hopping may lend a faint haze. Displays a persistent, moderate-sized, off-white head with good lacing.
Aroma. Moderately high hop intensity featuring gooseberry and white wine notes from Nelson Sauvin, combined with grapefruit and resinous pine from Chinook. A supportive bready and biscuity malt character is present, alongside light floral and citrus notes from Cascade and low fruity esters.
Taste. Initial bready and light toasty malt flavors are quickly met by assertive hop character. Nelson Sauvin provides tropical fruit and vinous qualities, while Chinook contributes a spicy, piney bitterness. The bitterness is firm but clean, balancing the malt. Cascade dry-hopping adds a citrusy finish. The aftertaste is medium-dry and crisp with lingering hop oils.
Mouthfeel. Medium-bodied with a smooth, non-astringent texture. Carbonation is medium-high, contributing to a refreshing and dry sensation. A very light, smooth alcohol warmth is present at 5.9% ABV.
