Northern IPA is a crisp, punchy take on the classic American IPA style, leaning into the aggressive dryness and firm bitterness characteristic of West Coast examples. The sensory profile is dominated by a bold blend of Centennial, Mosaic, and Simcoe hops, which contribute layers of zesty grapefruit, resinous pine, and vibrant tropical mango. A lean, grainy malt backbone provides just enough structure to support the high hop intensity without interfering with the beer's refreshing, dry finish. At 5.2% ABV, it offers a highly drinkable experience while maintaining the assertive, hop-forward balance expected of its North American inspiration.
Appearance. Medium gold to light amber (7-9 SRM) with brilliant clarity. Pours with a medium-sized, persistent white head that leaves consistent lacing as it recedes.
Aroma. High intensity hop aroma featuring distinct notes of grapefruit, floral citrus, and resinous pine. Secondary notes of mango and light berry are present. Low, clean, grainy-sweet malt aroma; fermentation is very clean with no noticeable esters.
Taste. High hop flavor echoing the aroma's citrus zest, tropical fruit, and pine needles. The bitterness is firm and clean, providing a sharp but smooth counterpoint to a low, crackery malt base. The fermentation profile is neutral, leading into a very dry, crisp finish with a lingering, hoppy aftertaste.
Mouthfeel. Medium-light body with a smooth, crisp texture. Carbonation is moderate-high, enhancing the dry finish. No detectable alcohol warmth or astringency.
