This complex fruit profile is elevated by the distinctive strawberry and melon notes of Belma hops, which integrate seamlessly into a soft, tangy sour base. Appearance. Deep pinkish-purple to ruby red hue; displays a light pink, fine-textured head with moderate retention. Generally hazy to opaque due to the heavy addition of forest fruits and wild fermentation components.
Aroma. High intensity; primary notes of ripe strawberry and tart raspberry are prominent. Secondary layers of earthy blackcurrant and dark blackberry provide depth. The Belma hops contribute subtle hints of melon and additional berry esters. Fermentation character is clean but tangy, with a refreshing lactic tartness and a whisper of rustic wild funk.
Taste. Initial impression is a sharp, refreshing tang of mixed forest fruits. The sweetness of the strawberries and blackberries is largely fermented out, leaving behind pure fruit essence and esters. Belma hops provide a delicate strawberry-like flavor that reinforces the fruit adjuncts. Bitterness is very low, allowing the lactic acidity to provide the primary structural balance. The finish is crisp, dry, and laden with lingering berry skins.
Mouthfeel. Medium-light body with a soft, slightly creamy texture. High carbonation provides a prickly, refreshing sensation that scrubs the palate. Alcohol warmth is nearly imperceptible. A very slight tannin from the berry skins adds a subtle, pleasant astringency and enhances the dry perception.
