This refreshing Tepache-inspired Wild Specialty Beer captures the essence of a traditional Mexican fermented beverage with a sophisticated craft twist. The sensory profile is dominated by the vibrant acidity of fresh pineapple, which provides both a juicy tropical character and a sharp, zesty brightness. Warm, aromatic notes of cinnamon weave through the profile, adding a subtle earthy spice that grounds the fruit. A background of wild fermentation lends a mild, approachable funk and a clean lactic sourness. With its low alcohol content and effervescent carbonation, it offers an incredibly crisp, light-bodied experience that finishes dry, balanced by the subtle roundness of cane sugar.

Appearance. Golden straw color (SRM 3-5). Thin, white head with fleeting retention and minimal lacing. Noticeable haze is present, consistent with the use of fresh fruit and wild fermentation.

Aroma. Moderate to high intensity. Bold aromas of ripe, acidic pineapple dominate, complemented by the warm, woody spice of cinnamon. A light lactic tartness is present alongside subtle earthy wild fermentation notes. Very low malt presence with a hint of raw cane sugar sweetness.

Taste. An immediate burst of tart pineapple juice is followed by a mid-palate wave of warming cinnamon. Hop bitterness is virtually non-existent, leaving the lactic acidity to provide the primary structure. The cane sugar provides a brief counterpoint to the acid before finishing very dry. The aftertaste is clean and crisp, featuring lingering tropical fruit tang and a touch of spice.

Mouthfeel. Light-bodied and highly carbonated, resulting in a prickly and refreshing sensation. No alcohol warmth is perceived. A slight, pleasant astringency from the pineapple and cinnamon enhances the overall dryness.
