This special Gueuze blend presents a masterfully balanced profile, showcasing the maturity of its seventy percent three-year-old lambic component. The aroma greets the senses with a sophisticated bouquet of horse blanket funk, weathered leather, and bright rhubarb, underpinned by a light honeyed wheat character. On the palate, a vibrant, integrated acidity carries notes of citrus rind and green apple, softened by a subtle oak-derived vanilla. The mouthfeel is elegantly effervescent and bone-dry, reflecting its extended bottle conditioning. It concludes with a long, tart, and earthy finish that exemplifies the refined complexity of the Tilquin house style.
Appearance. Deep golden (5-6 SRM) with a slight haze from being unfiltered; features a thick, rocky, mousse-like white head with exceptional retention and lively, persistent effervescence.
Aroma. High intensity of complex funk including hay, barnyard, and leather; moderate sharp sourness is balanced by fruity notes of lemon zest, rhubarb, and pome fruit; low bready wheat malt and a faint hint of aged oak.
Taste. Initially sharp and sour, evolving into complex layers of earthy funk and citrus pith; very low bready malt sweetness is quickly overtaken by a firm, refreshing acidity; no hop flavor or bitterness; finish is bone-dry and crisp with a lingering tart, mineral aftertaste.
Mouthfeel. Medium-light body with a soft, velvety texture; high carbonation provides a prickly, effervescent sensation; noticeable but well-integrated alcohol warmth and a clean, puckering tartness without harsh astringency.
