Gueuzerie Tilquin

This sophisticated Fruit Lambic captures a delicate balance between the rustic funk of Gueuzerie Tilquin and the refined vinous character of Pinot Gris grapes. The Meerts base provides a lighter, more approachable structure, allowing the subtle notes of the refermented fruit to shine. Expect a sensory journey of white stone fruits, light floral honey, and a distinct grape-skin tannin. The interplay of one-year-old Meerts and aged lambic blends creates a complex acidity that is both bright and earthy. With a bone-dry finish and lingering notes of pear and wild hay, it reflects a masterful expression of fermented fruit and wild yeast.

Appearance. Hazy, golden-amber with subtle copper or salmon hues from the Pinot Gris skins. Produces a tall, white, mousse-like head with excellent persistence and fine lacing.

Aroma. High intensity. Dominant vinous notes of white grape, ripe pear, and floral blossom. Underpinned by classic lambic funk—wet hay, earthy basement, and a sharp, lemony lactic acidity.

Taste. Initial impression is a refreshing, crisp tartness. The Pinot Gris contributes flavors of apricot, grape must, and a slight spicy phenol. Malt is minimal, providing a faint cracker-like support. No hop bitterness is perceived. Finishes bone-dry with a lingering, puckering acidity and a touch of woody tannin.

Mouthfeel. Medium-light body, avoiding wateriness despite the lighter Meerts base. High carbonation provides a sparkling, champagne-like effervescence. Low astringency with a clean, acidic snap.
