The sensory experience is defined by a complex aromatic tapestry of dusty cellar funk, leather, and bright lactic acidity, all softened by the juicy, floral essence of the fruit. On the palate, the mango provides a fleshy depth that balances the sharp, puckering tartness and wood-aged tannins. This draft-exclusive version remains crisp and bone-dry, showcasing a masterful balance between wild Brettanomyces complexity and refreshing tropical fruit.
Appearance. Pale gold with distinct yellow-orange hues (5-7 SRM); features a fluffy, white, mousse-like head with moderate retention and light lacing. The clarity is slightly hazy, typical of fruit-infused spontaneous fermentations.
