Cervecera Guayacán presents a refined American Stout that balances power and elegance. This deep black ale reveals copper highlights when held to the light, signaling a complex grain bill. High-temperature mashing lends a luxurious weight to the palate, supporting rich, roasted malt and roasted barley expressions. Intense aromas of freshly ground coffee and dark cocoa dominate the senses, while subtle, natural vanilla notes emerge as it warms. Appearance. Jet black in color (SRM 38) with deep copper highlights at the edges. It supports a large, persistent, tan-colored head with excellent lacing. The liquid is opaque.
Aroma. High intensity of roasted malt, featuring clear notes of dark chocolate and espresso. A subtle sweetness reminiscent of vanilla is present. Hop aroma is medium-low with a resinous American character. Low fruity esters and a clean fermentation profile.
Taste. Initial impression is dominated by moderate to high roasted flavors of coffee beans and bittersweet cocoa. A medium malt sweetness follows, offering caramel and vanilla notes that soften the roast. Bitterness is firm and medium-high, balancing the residual sugars. The finish is medium-dry with a lingering, elegant roasted aftertaste and a touch of resinous hop flavor.
Mouthfeel. Medium-full body with a notable creaminess and volume due to a high-temperature mash. Carbonation is medium-high. Provides a light, smooth alcohol warmth without any harshness or significant roast-derived astringency.
