Guaraní La Don Corinto is a robust 7% ABV Saison that pours a deep, toasted red. The grain bill, featuring Pilsen, Pale, and Biscuit malts, provides a rustic foundation, while Caramelo 60, Special B, and Chocolate malts contribute layers of dark fruit and cocoa. Honey in the mash ensures a high attenuation, letting a botanical blend of star anise, fennel, and cardamom pierce through the malt. Citrusy notes from bitter orange peel and Cascade hops find harmony with the earthy, spicy qualities of Styrian Goldings and the firm bitterness of Zeus hops. It is a complex, aromatic ale that balances dark malt richness with a bone-dry finish.
Appearance.Deep copper to dark mahogany (SRM 18-22). Dense, long-lasting ivory head with excellent Belgian lacing. Slightly hazy due to the extensive botanical additions and unfiltered nature.
Aroma.High intensity. A complex marriage of fruity esters (orange, plum) and spicy phenols (black pepper). Toasted malt character with hints of dark caramel and light chocolate. Distinct botanical notes of star anise and herbal cardamom are prominent, complemented by floral and earthy hop aromas.
Taste.Initial toasted malt sweetness and biscuit flavors are quickly countered by a firm bitterness. Mid-palate presents a kaleidoscope of spices including cooling fennel and orange zest. Fermentation character is fruity and peppery. Despite the dark malts, the beer is highly attenuated with a very dry, clean finish and a lingering spicy, herbal aftertaste.
Mouthfeel.Medium body with a characteristic Saison effervescence from high carbonation. Noticeable but smooth alcohol warmth. Crisp and refreshing despite the complex ingredient list, with no cloying sweetness.
