This collaborative Berliner Weisse delivers a vibrant sensory experience centered on a generous addition of sun-ripened mango from the Costa Tropical. A sharp, clean lactic sourness defines the entry, quickly followed by the lush, tropical sweetness of the fruit. The malt profile is delicate and refreshing, featuring Pilsner malt and wheat that impart a subtle sourdough and raw bread dough character. The finish is remarkably dry and effervescent, with the crisp acidity and high carbonation cleansing the palate. It is a highly refreshing, fruit-forward interpretation of the classic German sour ale, balancing tartness with intense tropical depth.
Appearance. Pale straw to a slightly golden-yellow hue with a noticeable haze from the mango addition. Pours with a large, dense white head that shows poor retention, typical of the style.
Aroma. High intensity of fresh, pulpy mango is at the forefront. This is accompanied by a moderately sharp, clean lactic acidity and a light background of sourdough and grainy wheat. No hop aroma is present.
Taste. Clean lactic sourness dominates the initial impression, followed by a burst of natural mango flavor. A light doughy and grainy wheat malt backbone provides a soft support. Hop bitterness is undetectable, with the crisp acidity providing the primary balance. The finish is very dry and refreshing with a lingering tart fruit character.
Mouthfeel. Light body with a crisp, acidic snap. Carbonation is very high and prickly, enhancing the refreshing quality. No alcohol warmth is perceived.
