This complex Brett Beer showcases the wild terroir of Iceland’s Snæfellsnes peninsula, utilizing yeast harvested from Svörtuloft. The addition of wild blueberries imparts a deep fruit character that intermingles with distinct grassy and earthy notes. At 8.8% ABV, the beer maintains a sophisticated balance between its potent strength and a refreshing, balanced acidity. The wild yeast profile provides a rustic depth that evolves on the palate, while the berries offer a bright, tannic edge. The result is a dry, highly attenuated experience where fruity esters and funk harmonize with the subtle tartness of the northern fruit.
Appearance. Deep ruby to dark purple (30–35 SRM) from the wild blueberries; persistent, light pinkish-tan head with good lacing; slight haze typical of wild fermentation and fruit additions.
Aroma. High intensity; dominant notes of tart wild blueberries and earthy funk; secondary aromas of mown grass, wet hay, and subtle stone fruit esters; minimal malt presence with no hop aroma.
Taste. Initial burst of tart blueberry skin and juice; mid-palate reveals complex earthy and grassy flavors from the Svörtuloft yeast; low bitterness; very dry, highly attenuated finish with a lingering, balanced acidity and a touch of fruit tannin.
Mouthfeel. Medium body, surprisingly lean for its high ABV due to attenuation; moderate to high carbonation; noticeable but well-integrated alcohol warmth; low astringency.
