This vibrant Double IPA represents a modern sensory collision of thiol-liberating yeast and high-impact dry hopping. A base of English pale malt provides a soft, bready foundation, while flaked oats create a silky, plush canvas for an aggressive hop profile. Expect an explosion of pink guava and ripe peach driven by Citra and Vic Secret, layered with the resinous pine and berry complexity of Mosaic. The specialized Tropicale yeast amplifies these tropical characters, introducing distinct notes of piña colada and bubble gum. Appearance. Gold to light orange-copper (SRM 6-9). Features a moderate-sized, persistent, off-white head with excellent lacing. Displays a significant haze from the inclusion of flaked oats, though remaining luminous.
Aroma. Intense hop aroma dominated by tropical fruit, specifically pink guava, pineapple, and stone fruit. Secondary notes of citrus and berry emerge alongside a unique bubble gum ester profile from the Tropicale yeast. A supportive, low grainy-sweet malt character sits in the background.
Taste. High hop flavor intensity mirroring the tropical aroma with prominent peach and piña colada notes. The English pale malt provides a clean, soft bready flavor that supports the hop bitterness. Bitterness is firm and assertive but smooth, lacking harshness. The finish is medium-dry with a lingering resinous and tropical fruit aftertaste.
Mouthfeel. Medium-full body with a notably smooth, creamy, and soft texture derived from the flaked oats. Carbonation is moderate. A restrained, clean alcohol warmth is present without being solventy.
