This Belgian-inspired Alternative Grain Beer offers a unique sensory profile, substituting traditional barley with gluten-free grains to recreate the depth of a classic Belgian Dubbel. A prominent Belgian yeast bouquet leads the aromatics, presenting notes of spicy clove and dark stone fruits like plum and raisin. Distinctive dark sugar and toffee sweetness permeate the palate, balanced by the subtle, nutty, and slightly bready character of the alternative grains. Despite the absence of malted barley, it maintains a rich, mahogany hue and a lively carbonation that lifts the sweet, fruity mid-palate toward a surprisingly clean and slightly dry finish.

Appearance. Deep mahogany to dark amber with a slight haze. Topped by a dense, long-lasting, off-white to tan head that leaves moderate lacing.

Aroma. Moderate to high intensity. Complex Belgian yeast bouquet featuring spicy phenols like clove and pepper alongside fruity esters of dried plum, raisin, and cherry. Subtle toffee and caramelized sugar notes are complemented by a faint, unique nuttiness from the alternative grains.

Taste. Rich initial impressions of toffee and dark sugar. Complex fruitiness mirroring the aroma with notes of dark cherry and raisin. The alternative grains provide a distinct bready, grainy foundation that is less biscuity than barley but adds a pleasant nuttiness. Low hop bitterness; the finish is moderately dry with a lingering spicy yeast character.

Mouthfeel. Medium-light body, slightly thinner than a traditional barley-based version. High carbonation provides a prickly, effervescent sensation. A gentle alcohol warmth is present but well-integrated at 7% ABV.
