This bold Wild Specialty Beer pours with a vibrant, fruit-stained intensity, honoring its namesake with a complex trio of raspberry, blueberry, and guava. The aroma is a high-intensity bouquet of jammy forest berries and tropical nectar, backed by the rustic, earthy funk of a wild fermentation. On the palate, a sharp, refreshing tartness cuts through the lush fruit profile, where the zesty guava brightens the deep, tannic notes of the berries. At 9% ABV, a subtle, well-integrated warmth rounds out the finish, balancing the vibrant acidity with a smooth, lingering fruit essence.
Appearance. Deep ruby to violet-purple with a persistent, pink-tinted foam head; hazy to opaque with significant fruit particulate.
Aroma. High intensity; dominant notes of fresh raspberry and jammy blueberry are complemented by the tropical, musky perfume of guava. Underlying wild character presents as light leathery funk and a sharp, lactic tartness.
Taste. Initial impression is a bracing, clean acidity. Intense fruit flavors of tart raspberry and sweet blueberry lead, followed by the exotic, citrus-like zing of guava. The beer version of RBG is a sour smoothie flavored with Raspberry, Blueberry, and Guava. This is a massive beer with high alcohol and bold flavors of berries and tropical fruit. We mash Pilsner malt with wheat for a neutral flavored base beer. Our sour yeast strain ferments the beer with Guava puree. We add more Guava, Raspberry, and Blueberry after the beer is finished to sweeten things up and balance the acidity.
