Cocoanaut is a decadent Imperial Stout that represents a lush sensory expedition. Extensive 24-month aging in Willet bourbon barrels introduces deep layers of toasted oak and spicy spirits to the massive malt base. The addition of Ugandan vanilla beans provides an intoxicating floral sweetness, while Woodblock Chocolate Ecuador cacao nibs infuse the beer with a velvety, bittersweet richness reminiscent of premium dark fudge. This collaboration delivers an intense, multi-faceted profile where the roast of the Imperial Stout meets the creamy, opulent notes of high-quality adjuncts and long-term barrel maturation, finishing with a lingering, warming complexity that avoids being overly cloying.
Appearance. Jet black and opaque (SRM 40+). A dense, dark brown head with moderate retention and light lacing. High viscosity is visible as legs on the glass.
Aroma. High intensity. Bold layers of bittersweet chocolate and espresso-like roast lead, followed by a wave of floral Ugandan vanilla and oaky bourbon. Secondary notes of dark fruit, such as raisins and prunes, mingle with a soft, spirit-derived warmth and hints of caramel.
Taste. Initial impression of rich dark fudge and cocoa from the Woodblock Chocolate Ecuador cacao nibs. The mid-palate reveals charred oak, vanilla bean, and spicy bourbon from the Willet barrels. Moderate roasted bitterness provides a necessary counterpoint to the malt sweetness.
