This Wild Specialty Beer from Great Divide’s Beach Milk Project presents an intense sensory collage. The appearance is a vibrant, fruit-stained magenta with a pink-hued foam. On the nose, an explosion of ripe blackberry, raspberry, blueberry, and strawberry mingles with the tropical brightness of mango and the deep, vinous notes of black currant and cherry. The wild fermentation provides a sharp, clean lactic acidity that is masterfully softened by the addition of lactose. This creates a creamy, smoothie-like texture where the juicy fruit medley thrives, finishing with a balanced, lingering sweet-tart character.
Appearance. Deep magenta to purple-red in color with a persistent, fine-beaded pink head. Hazy to nearly opaque due to heavy fruit solids and the presence of lactose.
Aroma. High intensity; dominant aromatics of fresh-picked raspberry, strawberry, and blackberry. Secondary notes of tropical mango and earthy black currant are evident. A clean, lemony lactic tartness is present alongside a subtle creamy sweetness from the lactose.
Taste. Initial hit of vibrant lactic sourness from wild fermentation is quickly rounded by a lush medley of blackberry and cherry flavors. The mango and strawberry contribute a perceived ripeness, while the lactose provides a smooth, milky sweetness that prevents the acidity from becoming sharp. Hop bitterness is negligible; the finish is long, fruity, and creamy.
Mouthfeel. Medium body with a notable silkiness and creaminess from the lactose. Moderate carbonation provides a gentle lift. Very low astringency despite the heavy fruit skins. Mild, well-integrated alcohol warmth is present.
