Gravity Well Brewing Co

The Rise of Endymion is a potent Imperial expression of a Wild Specialty Beer, surging with a concentrated triad of Raspberry, Blackcurrant, and Blueberry. This complex ale marries the sharp, vinous acidity of dark berries with a nuanced wild fermentation profile. The aromatics are dominated by jammy fruit and a background of rustic funk, while the palate delivers an intense burst of tart berry skin and forest fruits. At 8.5% ABV, it presents a more substantial presence than typical wild ales, finishing with a lingering, dry acidity and a sophisticated touch of fruit tannin that balances its robust strength.

Appearance. Deep magenta to dark purple (SRM 25-35); moderately persistent pink-tinted head with fine lacing; hazy to opaque due to heavy fruit addition and wild yeast sediment.

Aroma. High intensity aromatics of fresh raspberry and earthy blackcurrant; secondary notes of blueberry jam and leathery Brettanomyces funk; moderate lactic acidity; very low grainy malt; no hop aroma.

Taste. Initial impression is sharply tart and fruit-forward with dominant raspberry acidity and deep blackcurrant skin; blueberry provides a rounded mid-palate fruitiness. Low malt sweetness is quickly overtaken by a lactic sourness and wild fermentation character (earthy, spicy). Bitterness is low to undetectable; finish is dry and lingering with a vinous, berry-skin aftertaste.

Mouthfeel. Medium body, more substantial than typical wild ales due to higher ABV; moderate to high carbonation; noticeable alcohol warmth; light to moderate astringency from fruit tannins; no creaminess.
