Gravity Well Brewing Co

Sagittarius B2 is a vibrant Gose that reimagines the historical style through a modern, fruit-forward lens. Utilizing a lean grist of Extra Pale malt and Wheat malt, Gravity Well employs a co-pitch of Lactobacillus and Kveik yeast to develop a clean, refreshing acidity and subtle citrus esters. The inclusion of raspberry puree transforms the profile, layering a bold, juicy berry character over the characteristic saline foundation. The result is a highly effervescent and crisp experience where the tartness of the raspberry harmonizes with the mouthwatering quality of the salt, finishing dry and remarkably bright with a refreshing, lingering fruit presence.

Appearance. Deep pinkish-red to rose-colored with a moderate to full haze from the wheat and fruit solids. It features a moderate, pink-tinted white head with good retention and visible effervescence.

Aroma. High intensity of fresh raspberry puree dominates the nose, supported by a clean, lactic tartness. Low bready and doughy notes from the Wheat malt are present, accompanied by faint citrusy esters from the Kveik fermentation. Salt is nearly imperceptible but provides a clean, mineral backdrop.

Taste. The initial impression is a burst of tart raspberry and bright acidity. The malt provides a soft, bready backbone of Extra Pale malt that prevents the acidity from becoming harsh. Very low bitterness allows the acidity to drive the balance. The finish is dry and crisp, with a lingering raspberry skin character and a subtle saline note that enhances the refreshing quality.

Mouthfeel. Medium-light body with very high carbonation that feels prickly and effervescent on the tongue. The salt provides a tingly, mouthwatering quality that rounds out the acidic sharpness without adding weight. No alcohol warmth is perceived.
