This vibrant Wild Specialty Beer captures the essence of fresh raspberries through a lens of expressive fermentation. Proxima Centauri pours with a striking ruby-red glow, immediately releasing a high-intensity bouquet of jammy red fruit and sharp lactic acidity. The raspberry character is primary and authentic, blending seamlessly with subtle earthy funk and a hint of floral esters typical of wild microbes. On the palate, a brisk, clean sourness highlights the fruit’s natural tartness, stripping away sweetness to leave a crisp, bone-dry finish. Effervescent carbonation and a light, nimble body make this a refreshing exploration of fruit and acidity.

Appearance. Vibrant ruby-red to deep pink hue; pours with a frothy, light pink head that shows moderate to low retention; clarity is slightly hazy due to fruit solids.

Aroma. High intensity of fresh, jammy raspberries and tart red currants. Supporting notes of sharp lactic acidity, lemon zest, and a faint, earthy funk. Malt is a minimal background of wheat or cracker; no hop aroma is present.

Taste. Assertive initial impression of tart raspberry and bright lactic sourness. The fruit flavor is authentic, resembling unsweetened berry puree with a slight seed-like tannin.
