Planetary Misalignment is a high-gravity Straight Sour Beer that pushes the boundaries of its style with a massive infusion of tropical fruit. The aroma is defined by a sharp, clean lactic acidity that intertwines with an explosive bouquet of passion fruit and pineapple, masking the subtle crackery notes of the pale malt base. At 8% ABV, a significant warming sensation carries the dense fruit profile across the palate. With triple the fruit of the original, the taste is intensely tangy and vibrant, finishing with an off-dry, lingering tropical sweetness that balances the crisp, puckering, and refreshing finish.
Appearance. Straw to light gold (3-5 SRM). Generally hazy to opaque due to the intense fruit loading; features a dense white head with moderate to poor retention and minimal lacing.
Aroma. High intensity lactic sourness provides a sharp, clean edge. Dominant tropical fruit character (mango, passion fruit) overwhelms the subtle biscuity and crackery pale malt notes. No hop aroma; clean fermentation with no spicy or funky phenols.
Taste. Clean, powerful lactic sourness dominates the initial impression. Intense tropical fruit flavors saturate the mid-palate, supported by a faint bready or grainy malt backbone. Hop bitterness is undetectable (0-5 IBU). The finish is off-dry and fruit-forward, lacking any vinegary or harsh acidity.
Mouthfeel. Medium-full body with a slight viscosity from the high fruit content. Moderate carbonation provides a crisp snap. Noticeable alcohol warmth is present due to the 8% ABV, though it remains smooth and well-integrated without astringency.
