Arctic Soirée is a vibrant and sophisticated interpretation of a Saison, showcasing a masterful layering of rustic farmhouse character and bright botanicals. Fermented and aged in oak tanks with Brettanomyces, the profile is defined by an earthy, leathery funk that provides a complex backdrop for the addition of hibiscus and lime juice. The hibiscus contributes a distinctive floral elegance and a subtle berry-like tartness, while the lime juice provides a zesty, citrus-forward acidity that heightens the beer’s refreshment. This highly attenuated ale is bone-dry, balancing spicy yeast phenolics against structural wood tannins and a crisp, effervescent finish.
Appearance. Presents a unique deep pink to light ruby hue with a slight haze from the hibiscus and lack of filtration. Pours with a dense, rocky, pale-pink head that shows excellent retention and leaves consistent lacing.
Aroma. High intensity with a complex bouquet of earthy Brettanomyces funk, featuring notes of hay and leather. Bright citrus aromatics from the lime juice mingle with floral hibiscus, supported by spicy black pepper phenolics and a faint, woody oak character.
Taste. Initially bright and tart with lime and floral hibiscus notes, followed by a rustic, grainy malt core. The Brettanomyces provides a lingering complexity of tropical fruit and earth. Bitterness is moderate but crisp, working in tandem with the acidity for a very dry, clean finish with lingering spicy and woody notes.
Mouthfeel. Medium-light body with high, effervescent carbonation that creates a prickly, refreshing sensation. Very light tannic astringency from the oak and hibiscus adds structure, with no noticeable alcohol warmth.
